My day involved rain, laundry, more rain, Trinity (the adorable little girl I babysit), more rain and now I’m home relaxing!!

I made Cheesy Chicken Cups for dinner. I know they don’t look too appetizing but I always enjoy them. I’m back on WW for the 10th time, so I’ll be attempting to eat healthy. Wish me luck! 
Cheesy Chicken Cups1 can Buttermilk Biscuits Reduced Fat (10 biscuits) 50 calories per biscuit1 cooked chicken breast, cut into small pieces1 can Healthy Request Cream of Chicken Soup2/3 cup FF Shredded Cheddar Cheese1 TBS dried parsley flakes1/2 tsp black pepperPreheat oven to 400 degrees. Place each biscuit into a muffin pan. Press the biscuits into the holes (and up the sides) to form cups. In a bowl, combine chicken, soup, cheese, parsley and pepper. Mix well. Spoon evenly into cups.Bake for 12-15 minutes or until golden brown.WW Points: 2 cups is 5 points or 3 cups is 7 points
I used cream of mushroom b/c Key Foods doesn’t carry the healthy request cream of chicken.

Rest assured I do my best to avoid all the healthy stuff.

Yes, I enjoy the artichokes,  jasmine rice, edamame, turkey chili and eggplant cutlets. 
It’s a new year, I need to eat healthier. Trader Joe’s has single- handedly changed the life of my freezer.

I’m a sheet person thanks to my mom. Whenever I’m near a Tuesday Morning, I make sure to stop in to look for a set of 700-1,000 count sheets. You can find them for well under $100 bucks and I like to have more than one set.
So, tonight I was at Target and for some reason decided to splurge ($20) and pick up a set of Jersey sheets. I must say not too shabby. It isn’t Egyptian Cotton but it definitely is a nice change. Just imagine sleeping in a bundle of extremely soft old Hanes t-shirts.
